For an adults-only version of this drink, swap out the unsweetened grape juice with an equal amount of dry red wine. 

Prep time: 10 minutes
Chilling time: At least 4 hours
Serves: 4-6

Ingredients:

½ c. blueberries
1 c. strawberries, sliced
1 large orange, sliced*
1 medium ripe peach, sliced
2 c. unsweetened grape juice
1 c. freshly squeezed orange juice
2 cinnamon sticks, optional
2 c. sparkling water or club soda
Ice, to serve

Reserve one orange slice and cut into 4 or 6 small wedges for garnish

Directions:

  1. Add the fruit to a large pitcher and gently muddle with a large wooden spoon to release the juices.
  2. Add the grape juice, orange juice, and cinnamon sticks. Place the pitcher in the refrigerator to chill for at least 4 hours.
  3. To serve, fill individual serving glasses with ice and add sparkling water until half full. Top off with the chilled sangria and fruit, and give a quick stir to combine. Garnish each glass with an orange wedge before serving. Enjoy!

Prep time: 20 minutes
Cook time: 50-55 minutes
Serves: 4-6

Ingredients:

2½ lbs. Russet or other starchy potatoes, peeled and cut into thin wedges
1 t. garlic powder
Sea salt and black pepper, to taste
¾ c. chicken broth
¼ c. extra virgin olive oil
½ c. fresh lemon juice
2 t. fresh lemon zest, preferably organic
½ T. dried oregano

Optional: Fresh oregano for garnish

Directions:

  1. Place the top oven rack in the center position and preheat the oven to 400°F.
  2. Prep and arrange the potatoes in a single layer in a large cast iron skillet. Sprinkle with the garlic powder and season with salt and black pepper to taste. Set aside.
  3. Whisk together the chicken broth, olive oil, lemon juice, lemon zest, and oregano in a medium bowl and pour over the potatoes.
  4. Place the skillet in the preheated oven and cook for 25 minutes. Then, carefully turn the potatoes and return them to the oven for another 25 minutes.
  5. After the cooking time is complete, remove the skillet from the oven, carefully drain it, and reserve any excess liquid. Return the skillet to the oven for another 5 minutes or until the potatoes are nicely browned on the edges.

  1. Remove from the oven and cool slightly before serving with some reserved cooking liquid drizzled on top. Enjoy!

Tomato-Cucumber Salad Ingredients:


2 c. cherry or grape tomatoes, quartered
½ medium red onion, finely diced
1 large cucumber, chopped
1/3 c. Kalamata olives, drained and chopped
4 oz. Feta cheese, crumbled
3 T. fresh lime juice
Sea salt and black pepper, to taste

Remaining Ingredients:

1 T. extra virgin olive oil
2-3 cloves garlic, finely chopped
1 large organic lemon, sliced thin
4 6-oz. grouper or other mild white fish fillets
Sea salt and black pepper, to taste
2 T. capers, drained


To serve:


1 large lemon, cut into 8 wedges
Fresh thyme sprigs for garnish

Directions:

  1. In a large bowl, prepare the tomato-cucumber salad by combining the tomatoes, onion, cucumber, olives, Feta cheese, and lime juice. Season with salt and black pepper to taste, and stir to combine. Set aside.
     
  2. Heat the olive oil and garlic in a large cast iron skillet over medium heat. Add the lemon and capers, and sauté until the lemon softens and develops a bit of color for approximately 2 minutes.
  3. Add the grouper to the skillet and generously season with salt and black pepper. Cook for 3-4 minutes per side or until the fillets are cooked. (Cook time will vary depending on how thick the fillets are. The fillets are done when they flake easily with a fork).


Remove from heat and add the tomato-cucumber skillet to the skillet. Cover for 1-2 minutes, or just until the cheese is softened and the other ingredients are warmed through. To serve, topped with fresh thyme sprigs, if desired, and offer the lemon wedges on the side. Enjoy!

Prep tip: Use a large, full-size baking sheet for this recipe—or divide it between two smaller sheets, if necessary. The goal is to have enough room to spread the veggies around the chicken breasts into a single, uniform layer without overcrowding.

Ingredients:



3 T. fresh lemon juice
3 T. honey, preferably local
2. T. tamari or coconut aminos
2. T. extra virgin olive oil
2. T. sesame oil
3-4 cloves garlic, finely minced
2 t. Italian seasoning
Sea salt and black pepper, to taste
4 8-oz. boneless, skinless chicken breasts
1 lbs. fresh asparagus, trimmed
2 small zucchinis, halved and sliced
1 large yellow squash, halved and sliced
Sprigs of fresh basil for garnish

    Directions:

    1. Combine the lemon juice, honey, tamari, olive oil, sesame oil, minced garlic, and Italian seasoning in a small bowl. Season with salt and black pepper to taste, and whisk to combine. Set aside.
    2. Season the chicken breasts with salt and black pepper, as desired, and add them to a large, sealable freezer bag. Pour half of the marinade over the chicken and seal the bag tightly. Gently turn the bag to ensure the chicken is uniformly covered.
    3. Marinate the chicken at room temperature for at least 30 minutes (but not more than 2 hours) or overnight in the refrigerator. Store the remaining marinade in an airtight container until ready to prepare the vegetables.
    4. When ready to prepare the chicken, preheat the oven to 400°F and spray a large baking sheet with non-stick cooking spray. Arrange the chicken on the prepared baking sheet and bake it for 15 minutes.
    5. While the chicken is roasting, add the asparagus, zucchini, and yellow squash to a medium bowl. Pour the remaining marinade over the veggies and season with salt and black pepper to taste. Gently toss to coat and set aside.
    6. After 15 minutes, remove the chicken from the oven and carefully arrange the veggies alongside it in a single uniform layer. Avoid overcrowding, or the vegetables will steam instead of roast. Pour excess marinade on top of the chicken and veggies.
    7. Return the baking sheet to the oven until the chicken is fully cooked through and the veggies are bright green and slightly fork-tender, approximately 15-20 minutes. Remove from oven and let the chicken rest for 5 minutes before serving.

    Ingredients:


    1 medium fennel bulb, thinly sliced
    2 shallots, sliced
    3 c. red seedless grapes
    1 t. dried thyme
    Sea salt and black pepper, to taste
    ¼ c. extra virgin olive oil, divided
    2 sprigs fresh rosemary
    4 thick-cut bone-in pork chops (approximately 1” thick)
    1 T. Dijon mustard

    Directions:

    1. Place the top oven rack in the center position and preheat the oven to 400°F.
    2. Arrange the sliced fennel, shallots, and grapes on a large, rimmed baking sheet. Sprinkle with dried thyme and season with salt and black pepper to taste. Drizzle with 2 tablespoons olive oil and toss to combine.
    3. Nestle the rosemary sprigs amongst the vegetables and grapes before placing the baking sheet in the oven. Roast until the fennel is fork tender and the grapes are nicely blistered and juicy, approximately 20-25 minutes. Remove the baking sheet from the oven and set aside.
    4. In the meantime, heat the remaining olive oil in a large skillet over medium heat. Lightly brush the pork chops with the mustard and season with salt and black pepper to taste.
    5. Add the seasoned chops to the hot skillet and sear until an excellent crust forms. Reduce heat slightly and continue cooking until the chops are cooked through but still juicy, approximately 7-9 minutes per side. (Actual cooking time will vary depending on the chops’ thickness and their internal temperature before cooking.) 

      Note: Pork should reach an internal temperature of 145°F before serving. Use an instant-read thermometer to confirm the pork has reached approximately 140°F before removing from heat. The internal temperature will continue to rise while the pork rests. 

    Remove the skillet from heat and loosely cover the chops. Allow chops to rest for 5 minutes before serving with the roasted fennel and grapes. Enjoy!

    There is nothing quite like the aroma of a warm, freshly baked dessert filling the kitchen. Our black cherry crisp is a classic recipe perfect for any occasion. Sweet and juicy black cherries are nestled beneath a buttery, crumbly topping, creating a delicious and comforting treat.


    Tip: Frozen cherries are much easier to use than fresh ones for this recipe. Place frozen cherries in a small strainer set over a large bowl to collect the liquid while thawing. Reserve the liquid to use in smoothies, cocktails, or non-alcoholic beverages. For example, you can combine cherry juice with club soda and crushed mint for a refreshing spritzer.

    4½ c. frozen black cherries, thawed and chopped
    ¼ c. honey, preferably local
    ½ t. ground cinnamon

    ½ c. almond flour

    Directions:

    1. Place the top oven rack in the center position and preheat the oven to 350°F.
    2. Combine thawed chopped cherries, honey, cinnamon, allspice, cloves, and thyme leaves in a bowl. Toss to combine and set aside.
    3. Combine the topping ingredients in a separate bowl and stir until oats are thoroughly coated and all ingredients are well combined. Set aside.
    1. Lightly grease the four 9-oz. oval cast iron baking dishes (or the 10” cast iron skillet) with coconut oil.
    2. Divide the cherry mixture equally among the cast iron mini-servers and spread it into an even layer. Divide the topping between the 4 mini-servers, as well, and spread into a thin layer on top.
    3. Place in the oven and bake for 30 minutes until the top is nicely browned and the cherry mixture is bubbly.

      Tip: If using a 10” skillet, cover loosely with aluminum foil after 30 minutes and bake for another 10-15 minutes.
    4. Remove from oven and set aside to cool for 5-10 minutes before serving plain or topped with Greek yogurt, whipped cream, and/or sugar-free ice cream. If desired, garnish with a couple of sprigs of fresh thyme. Enjoy!

    There’s nothing quite like the sizzle of steak cooking on a cast iron skillet. Our carne asada recipe brings the flavors of Mexico right to your kitchen. Carne asada recipe tender and juicy steak, marinated in a vibrant blend of spices, is perfectly grilled and served with fresh lime and tortillas for a delicious and satisfying meal.

    Skirt and flank steak are two of the most popular cuts of meat used to prepare this dish. Both are excellent choices for marinades and a quick sear over high heat. The key to success with either option is to thinly slice the meat against the grain or perpendicular to the long striations that run through the cut before serving.

    Marinade Ingredients:



    3 T. extra virgin olive oil
    3 T. fresh orange juice
    1 t. orange zest, preferably organic
    2 T. fresh lime juice
    3 T. tamari or coconut aminos
    3-4 large cloves fresh garlic, peeled and smashed
    1 t. chili powder
    ½ t. ground cumin
    1 t. Mexican oregano
    2 T. fresh cilantro, roughly chopped
    1 t. sea salt
    ½ t. black pepper



    Remaining Ingredients:

    1½ lbs. skirt or flank steak
    8-oz. cherry tomatoes, quartered
    2 T. fresh cilantro, chopped, divided
    ½ medium red onion, chopped small
    3 T. fresh lime juice, divided
    1 large avocado, chopped
    5-6 large radishes, trimmed and sliced thin
    1 large lime, cut into 8 wedges
    2 oz. Cotija cheese, crumbled
    1 large jalapeño, sliced


    Optional, to serve:

    Guacamole
    Gluten-free tortillas and/or lettuce wraps. 

    Directions: 

    1. To prepare the marinade, stir and combine all ingredients in a medium bowl. Set aside.
    2. Place the steak into a freezer bag and pour the marinade on top. Seal the bag tightly and turn several times to ensure the steak is evenly coated. Marinate at room temperature for at least 30 minutes (but less than 2 hours) or place in the refrigerator overnight. 


    Tip: If marinating the steak in the refrigerator, allow it to come to room temperature, approximately 20-30 minutes, before cooking.

    1. Combine the tomatoes, one tablespoon of fresh cilantro, red onion, and two tablespoons of fresh lime juice in a bowl. Season with salt and black pepper to taste, and stir to combine. Set aside.
    2. Toss the chopped avocado with the remaining lime juice in a small bowl and set aside to prevent browning.
    3. Heat a large cast iron skillet over medium-high heat. Remove the steak from the marinade and let excess liquid drip off before placing it in the hot skillet. Sear for 3-4 minutes per side for medium-rare or until the meat reaches the desired level of doneness.

    Remove from heat and allow steak to rest for 5 minutes before thinly slicing it against the grain. Serve immediately with the seasoned tomatoes, diced avocado, sliced radishes, lime wedges, and fresh cilantro. Top with sliced jalapeño and Cotija cheese. If desired, offer guacamole, gluten-free tortillas, and/or lettuce wraps on the side. Enjoy!
